Chicken Quesadilla

aco Bell Creamy Jalapeno Sauce

1/4 cup mayonnaise
2 teaspoons minced jalapeno slices
2 teaspoons juice from jalapeno slices
3/4 teaspoon sugar
1/2 teaspoon paprika
1/2 teaspoon cumin
1/8 teaspoon cayenne pepper
1/8 teaspoon garlic powder
dash salt

Prepare creamy jalapeno sauce by combining all ingredients in a small bowl. Cover and chill so that flavors develop. Stir occasionally. Use 1 tablespoon sauce per tortilla.

Taco Bell's Chicken Quesadilla Recipe

4 chicken breast tenderloins
4 large flour tortillas (10-inch)
1 cup shredded cheddar cheese
1 cup shredded monterey jack cheese
2 slices American cheese

Prepare creamy jalapeno sauce by combining all ingredients in a small bowl. Cover and chill so that flavors develop. Stir occasionally.

Preheat your barbecue grill to medium heat.

Rub chicken tenderloins with vegetable oil. Salt and pepper each side of each tenderloin. Grill for 3 to 5 minutes per side. When chicken is done, slice it very thin.

When you are ready to build your quesadillas, preheat a 12-inch skillet over medium low heat.

When the pan is hot lay one tortilla in the pan. Arrange about 1/4 cup of shredded cheddar cheese and 1/4 cup of shredded jack cheese on half of the tortilla. Tear up half a slice of American cheese and arrange it on the other cheeses.

Arrange about 1/4 cup of sliced chicken over the cheese.

Spread about 1 tablespoon of jalapeno sauce over the tortilla on the half with no ingredients on it.

Fold the sauced-covered half of the tortilla over onto the ingredients on the other half and press down with a spatula. Cook for about 1 minute, then turn the quesadilla over and cook for a couple more minutes or until the cheese inside is melted. Slice into four pieces and serve hot. Repeat with the remaining ingredients.

Makes 4 quesadillas.

Jamaican Chicken Salad

(Makes 4 servings)

1/2 cup bottled fat-free honey- Dijon salad dressing
1 teaspoon finely shedded lime peel
4 skinless, boneless chicken breast halves
2 to 3 teaspoon Jamaican Jerk Seasoning (reipe Follows)
2 teaspoon cooking oil
1 (16-ounce) package torn mix salad greens
16 refidgerated mango slices in light syrup, drianed

For dressing, stir together salad dressing and lime peel. Rinse chicken; pat dry. Sprinkle chicken with Jamaican Seasoning. In Skillet, cook chicken in hot oil over medium-hot heat about 6 minutes per side, until golden brown. Thinly bias-slice each chicken breast. Divide salad greens among 4 dinner plates. Arrage warm chicken and mangoes on top of greens; drizzle with dressing.

Kottopoul Me Pilafi -Chicken and Rice

3 pounds chicken parts
1/2 cup butter
2 tablespoons oregano
2 tablespoons lemon juice
1 medium onion, chopped
1 1/2 pounds tomatoes, peeled and chopped
3 cups long-grain white rice
6 cups chicken stock

In a large saucepan melt butter over medium heat and add chicken. Brown on all sides then remove frm pan and set aside. Add onion and tomato and saute un til onion turns translucent. Stir in oregano and lemon juice. Add rice and stir well to combine and coat all grians of rice. Add chicken stock, stir and return chicken t pot. Bring to a boil , reduceheat and simmer, uncovered, untl all surface liquid has ben absorbed. Cover, turn heat to vry low and cook 1 hour, stirring every 15 minutes to kee rice from burning or sticking.

Strawberry Turnovers

(serves :4)
1 package refrigerated crescent dinner rolls, (8 ounce)
1/3 cup whipped cream cheese
1/4 cup strawberry preserves
1 egg white, beaten
confectioners' sugar

On cookie sheet, separate dough in 4 triangle; pinch seams closed. Sprinkle with 1 Tablespoon confectioners' sugar. Spoon 1/4 of the cream cheese and 1/4 of the preserves in the center of each rectangle. Brush edges with egg white. Fold corners to center; press. Brush tops with egg white. Bake 15 to 20 minutes in preheated 375 degree oven. Sprinkle with confection' sugar.

Pumkin Cookies

1 5 ounce can pumkin
1spice cake mix
(mix)
bake @ 350 degrees for 10-12 min.

frosting!
1 stick butter (soft)
1 8 ounce cream cheese
2 tsp. vanilla
5-6 cup powder surgar

Great for all ages!

Sugar Cookies

1 cup butter
1 1/2 cups pwd. sugar
1 egs
2tsp vannilla
1tsp baking soda
1 tsp cream tartar
mix.
add 2 1/2 cups flour
bake 350 degress for 8-10 minutes

(sprinkle some surgar on top) you can frostng them 2!

Snickers Bar Pie

This actually taste like your biting into a real snickers bar, ENJOY!!

1 1/2 cups low-fat vanilla ice cream
1 cup cool whip Free
1/4 cup crunchy peanut butter
1(1ounce) box surgar free instant chocolate pudding mix
9 servings
2 hours 10 minutes

1) soften ice cream
2) mix ingrediants into ice cream
3) Put into an 8x8 pan or pie plate and freeze
